I watched JO yesterday, his guest chef made pork with cracklins and a
apricot dish.
Guest chef pan fried the leg of pork steaks then trimmed of the cracklin
part first. He made the cracklin in a fry pan...used a weight to hold it
flat and finished it in a oven.

The quartered apricots were fried up in a very lightly oiled pan briefly
then a little balsamic vinegar and a drizzle of honey...chopped fresh sage
was added to the pan after it was off the heat to wilt...sounded
good...suggested to use near ripe appricots...to add a touch of tang.
