These are inexpensive and easy to make. I got this recipe from a friend
that had 7 or 8 kids. She made these often!
Molasses Cookies
1 1/2 cup margarine
2 cup sugar
2 eggs
1/2 cup molasses
4 tsp baking soda
2 tsp cinnamon
1 tsp salt
4 cup flour
Melt and cool margarine in a mixing bowl. Add the sugar and cream
together with margarine. Add eggs continuing to mix. Add in molasses
continuing to mix. Blend in the soda, cinnamon, and salt. Stir in the
flour until the dough is well blended. Chill one hour in refrigerator.
Scoop out 1 inch balls with a melon scooper if you have one. Roll in
sugar and place on greased (or PAM'd) cookie sheets. Bake at 350* for 9
minutes. Remove quickly from pans and cool.
