I think I would precook the rice (maybe undercook it just a bit).
Store it in big ziplock bags in the frig or if you are in colder
climate, put it outside in Mother Natures cooler.
I cook for large groups of people quite often and I find that the big
Nesco type roasters indespensable. You can hold things at very low
temps quite well. I would simply dunk the rice (maybe in a new pillow
case) into hot water before adding it to the gumbo.
