Default bread making at the NYT

Hey Mary:

Some of us just always wonder why. However, often it has little to do with
making good bread.

With palms facing you, firmly press both little fingers together and form a
large cup squeezing all fingers together.
Scoop out three handfuls of flour
Add one of water
Measure a thumbnail sized mound of salt in the palm
Add a half-fist sized piece of old dough
Mix well adding a little more flour or water as necessary,
You know the rest<g>.
