Roasted Chicken with Peach Glaze
roasting chicken approx. 4-5 lbs.
1 teaspoon minced garlic
1/2 cup peach preserves
Heat oven to 375 F. Rinse chicken inside and out with cold water;
drain. Pat chicken dry with paper towels. Sprinkle chicken with garlic;
place chicken breast side up in pan. Bake at 375 F for 1 hour. Brush
chicken with preserves; bake an additional 35 to 45 minutes or until
fork-tender and juices run clear. Chicken is done when internal temp
reaches 180 F. Let stand 5-10 minutes before serving.
