Seared Salmon with Cilantro Cucumber Salsa

1/2 finely chopped cucumber
1 cup chopped tomatoes
1/2 yellow or orange bell pepper seeded and cut into 1"
julienne
2 tablespoons chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1 1/2 teaspoon canola oil
1 teaspoon honey
1/2 teaspoon red pepper flakes
1 teaspoon salt
4 5 oz. salmon filets
1/4 teaspoon freshly ground black pepper
lime wedges
Combine cucumbers, tomatoes, bell pepper, onion and chopped cilantro in a
bowl. Toss to mix. In a small bowl, whisk lime juice, oil, honey, and
red pepper flakes. Pour over cucumber mixture and toss to coat evenly.
Set aside. Lightly sprinkle salmon filets on both sides with salt and
black pepper. Heat 1/2 teaspoon oil in a large, nonstick frying pan,
over medium high heat. Add fish to the pan and cook, turning once, until
opaque throughout. About 4-5 minutes a side. Transfer salmon to plates
and top with 1/4 of the salsa per piece. Serve immediately with lime
slices
