Pumpkin Cheesecake Bars
1 cup flour
1/3 cup packed light brown sugar
5 Tbsp butter, softened
1/2 cup finely chopped pecans
1 8 oz pkg cream cheese, softened
3/4 cup sugar
1/2 cup solid packed pumpkin
2 eggs
1 1/2 tsp cinnamon
1 tsp allspice
1 tsp vanilla.
Combine flour and brown sugar. Cut in butter. Add nuts and stir in. Set aside 3/4 cup of
mixture to top with. Press in bottom of 8x8x1 1/2 inch baking pan. Bake at 350* for 15
minutes. While this is baking, combine remaining ingredients with mixer until well
blended. Pour over hot crust and top with reserved nut mixture and bake an additional 30
minutes. Remove, cool, and cut. Makes 32 1x2" bars. Takes 45 minutes to make from start
to finish.
