Cod Oreganata

24 ounces cod fillets
2 tablespoons olive oil
3/4 cup seasoned bread crumbs
1/4 cup chopped parsley
3 tablespoons lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon dried oregano

Preheat the oven to 425 F. Coat a baking sheet with cooking spray. Place the cod
on the prepared baking sheet, leaving space between the pieces. Combine the
bread crumbs, parsley, lemon juice, garlic, salt and oregano in a bowl, using
your fingertips to mix so the crumbs are thoroughly moistened with the oil.
Press the mixture lightly on top of the fish. Bake 10 minutes or until the fish
flakes easily with a fork. Makes 4 servings.
