Basil Tomato Soup
Serving Size : 4
2 tablespoons butter or margarine
1/2 onion -- chopped
1 carrots -- peeled and shredded
1 14 1/2 ounce can tomatoes, canned
1 14 1/2 ounce can tomatoes with green chilies
1/3 cup chopped fresh basil (1/4-1/2 cup) -- lightly packed
1/2 teaspoon sugar
1 cup chicken broth
2 tablespoons Italian bread crumbs
sour cream -- optional
In large saucepan, saute chopped onion and shredded carrots in butter or
margarine until onions are soft. Add tomatoes, basil, sugar and chicken
broth. Simmer, uncovered, about 5 minutes. Place tomato mixture in small
batches in blender or processor and process the mixture until lightly
pureed. Return to saucepan and stir in the Italian bread crumbs. Serve
soup warm.
