Spicy Fish Fillets
1 lb. white fish fillets
3/4 cup bread crumbs seasoned with:
1 teaspoon Garlic powder
1/4 tsp. black pepper
4 tablespoons grated parmesan cheese
2 tablespoons fresh parsley, chopped
1 teaspoon fresh coriander, chopped
1/2 teaspoon dried red pepper flakes
1/2 teaspoon dried basil
1/2 cup plain flour
1 egg, beaten
olive oil
hot chili sauce
salt to taste.
Place the fish fillets in a shallow dish, and pour hot chilli sauce over, sparingly
it's hot! Let this marinate for for at least 2 hours. Mix the bread crumbs with the
seasonings. Put the beaten egg in a dish that is large enough to fit the fish
fillets. Place the flour on a plate, and the breadcrumbs on another. Dip the fish
fillets into the egg, then the flour and finally the breadcrumbs. Pressing firmly
with your hands. Put enough olive oil to thinly coat the bottom of a frying pan.
Heat the oil and fry the fish until browned on both sides. Drain on absorbant paper
and serve. Makes 2 servings.
