And another recipe which has been handed down for generations in my family
:
Trifle
1 pkt trifle sponges (or sponge fingers or left over victoria sponge cake)
Raspberry/strawberry Jam
crystalized fruit cut into small bite size pieces
small tin mandarin oranges in own juice (optional)
sherry
1 pt custard
whipped cream
sliced toasted almonds
Cut sponges in half and spread jam before re-forming them. Line bottom of
cut glass bowl with sponges soak with sherry and/or juice from tin of
mandarins scatter mandarin segments and crystalized fruit over sponge
layer (keep a couple of pieces for decoration) Make 1 pint custard and
pour carefully over sponge/fruit mixture Allow to cool (cover with
clingfilm to stop skin forming) Whip cream and place over top of custard
Decorate with toasted almonds, orange segments and crystalized fruit.
No Christmas tide feasts would be complete without this dish - enjoy!
