Brandy Sauce
This sauce is traditionally served with Christmas Pudding.
250 ml thick cream
15 ml brandy
30 g soft brown sugar
1 egg white
Whip the cream until starting to thicken, then add the brandy and sugar
and
whip the cream until thick. Whisk the egg white until stiff but not dry.
Using a metal spoon, fold the egg white into the cream mixture. Turn the
sauce into a serving dish and serve.
Serves 4 - 6.
