If you are trying to avoid mayo because of spoilage worries, you can
relax. The notion that foods with mayo spoil easily is a myth, complete
BS. This applied only to commercial mayo, not to home-made, because the
commercial stuff is acidic enough to retard spoilage. See

If you have other reasons for avoiding mayo, try this sweet and sour
cole slaw recipe.
Shred or coarsely grate 1 lb of red and/or green cabbage. Grate 1 large
carrot. Mix both with 1/2c sugar and 1 tsp salt and let sit in a
colander for 1-4 hours. Discard the liquid that drains off. Mix with 1/2
tsp celery seed or caraway seed, 6 TB vegetable or olive oil, 1/4c rice
vinegar, and ground black pepper to taste. Can be served immediately but
is better if it sits in the fridge for a few hours.
