Cherry Flan (Clafouti)
3 cups cherries, pitted
1 1/4 cup milk
1/3 cup sugar
3 eggs
1 Tablespoon vanilla
1/8 teaspoon salt
2/3 cup flour, sifted
1/3 cup sugar
Powdered sugar
Blend milk, sugar, eggs, vanilla, salt and flour in towl.
In fireproof baking dish (8 cups) generously buttered, pour 1/4 inch of
batter. Set over moderate hat 1 minute to set batter. Spread cherries over
batter. Sprinkle with sugar. Pour rest of batter over cherries. Bake at
350 degrees for 1 hour. Sprinkle with powdered sugar.
