Peachy Ginger Baked Beans
Yield: 6 servings
1 pound (about) fully ripe peaches
2 - 1 pound cans baked beans
1/4 cup dark corn syrup
2 Tablespoons finely chopped onion
1 teaspoon ginger
Peel, pil and slice peaches. Measure 2 cups. In 2 quart casserole stir
together beans, corn syrup, onion and ginger. Top with peaches. Bake in
400 degree oven 1 to 1 1/2 hours. basting frequently, or until peaches are
well glazed.
