Hurricane Sauce for Pancakes or Ice Cream
3 tablespoons butter
2 cups pure maple syrup
3 cups cored, unpeeled tart apples, thinly sliced
Simmer butter and syrup in a heavy saucepan. Cook very gently so that the
slices do not break up for approximately 1-1/2 hours or until apples are
transparent and liquid is syrupy. Serve warm over pancakes or ice cream.
