Shrimp and Watermelon Salad Rangoon

Ingredients:
1 pound medium shrimp, cooked, peeled and deveined
2 cups watermelon cubes
1 green pepper, julienned
1/2 onion, thinly sliced
2 cups pineapple, cubed
1 cup mayonnaise
1/2 cup low-fat yogurt
1 T curry powder
1 head iceberg lettuce
Directions:
In a large bowl, combine shrimp, watermelon, pepper, onion and
pineapple. In a small bowl combine mayonnaise with yogurt and curry
powder; blend well. Pour over melon mixture and gently blend together.
Serve over shredded lettuce.
Makes 4 servings.
