Chilled watermelon soup
Ingredients
4 pounds (2 kg) watermelon flesh (seeded)
500 ml (20 fl oz) (2 cups) sweet white wine
30 ml (2 tablespoons) honey
5 ml (1 teaspoon) garam masala
grated rind of 1 lemon
8 fl oz (225 ml) sour cream
Directions
Bring watermelon, wine, honey, garam masala and lemon rind to a
boil, stirring constantly. Reduce heat and simmer for 20 minutes
and allow to cool. Puree in blender or food processor. Stir in
sour cream and chill thoroughly before serving.
