Spinach Salad with Peanut Dressing
1/2 cup veg. oil
1/4 cup water
1/4 cup salted cocktail peanuts
3 Tbsp honey
1 Tbsp lemon juice
2 tsp cider vinegar
Zing the above together in a food processor for the dressing.
8 cups torn fresh spinach (I always take the stems off or buy the more
tender baby spinach)
2 cups halved fresh strawberries
Serve in a pretty glass bowl. Put the dressing over it right before
serving. Voila!
