Sauteed Cabbage And Carrots With Ginger
Yield: 6 Servings
1/4 cup vegetable oil
1 cup chopped green onions, including some green top
1 large garlic clove, minced
3 Tbsp. peeled and finely chopped fresh ginger
1/2 tsp. hot red pepper flakes
1 large head green cabbage (tough outer leaves removed),
halved, cored and shredded (about 10 to 12 cups)
2 large carrots, peeled and shredded
Heat vegetable oil in large skillet over medium heat; add the green
onions, garlic, ginger and hot red pepper flakes. Saute for 3 minutes
until green onions start to wilt. Add shredded cabbage and carrots.
Stir-fry for 5 minutes, tossing frequently. Cover and cook over low heat
for 3 or 4 minute, or until cabbage is tender. Transfer to a serving bowl
and serve immediately.
