Perhaps one of the reasons they are so rare is that they can be
dangerous. Oil is an anaerobic environment, and nasty things like
botulism can grow in that. Garlic has been know to carry small amounts
of botulism, so even a small piece of garlic lingering in your oil can
cause a problem. It doesn't take much. The leathal dose of botulin (the
toxin that botulism makes) is about 15 ng (or 0.00000000015 grams).
