Yes you could, provided you balanced the salt content. Also, you could leave
the wild mushrooms out entirely and use the stems from the button mushrooms
instead. I tailored that recipe specifically for Jude, who doesn't eat
chicken and who wanted a wild-mushroom filling for Valentine's Day.
