1. Not only Chinese do this, but Americans sure do! I have heard of MSG
being a significant ingredient in KFC's chicken!
2. MSG is not some totally artificial chemical that people have zero
tolerance of. It exists in the human bloodstream if you consume any
protein having glutamic acid as one of its amino acids. Also, result in
human bloodstream if consuming MSG rather than glutamic acid is largely
the same except for dealing with a bit more sodium and retaining a bit
more CO2 to maintain blood pH at where it should be. Main effect of CO2,
bicarbonate and carbonate ions in human bloodstream is pH regulation.
Note that glutamic acid is a bigtime major amino acid in the protein of
brewer's yeast! Those who run into problems from glutamate should consume
less yeast!
