I came up with this as an alternative to whole brown rice. It's still got
the taste and texture of the rice but is lower in carbs.

Lite Rice
A carb reduced alternative to white rice. It's flavorful and
diabetic-friendly

4 cups Cauliflower ; - 1 med. head
1 cups Brown rice ; - cooked
1/4 cup Parsley ; - finely chopped
1 tablespoon Olive oil
1 dash kosher salt
1/4 teaspoon Black pepper ; - coarse ground

Roast the cauliflower in a 350° oven until tender and lightly browned. Cut
in chunks and allow to cool a bit. Then run it through the shredder blade of
a food processor. You could chop it very finely if a shredder isn't
available but shredded works best.
The rice should be tender but not mushy. The grains should still have a bit
of crunch to them.
Blend all ingredients together and toss lightly to mix. Adjust flavor with
salt & pepper as needed.
Serve as you would cooked whole rice.
