Dinner was delicious!
Oh what a good dinner!
They had some very nice greenhouse-grown basil at the gourmet market,
so I made fresh pesto. I mixed about 1/2 c of it with about 1/2 c of
fat-free half and half and sprinkled a teasppon or so of flour over it.
It suimmered down into a delicious pesto cream sauce. That went over
some roasted garlic - cheese ravioli i found at BJs, then the whole lot
of it was topped with steamed potatoes and green beans, then sprinkled
with parmesan. i've read that in italy they serve pesto pasta with
potatoes and green beans but i've never tried the combo. glad i did.
on the side, i made a marinated salad from what i had. amounts are
estimates but should give you an idea of proportion. 1 1/2 chopped
tomatoes (greenhouse grown so they actually tasted more like fruit than
cardboard!) , 1/4 c minced parsley, 1/4 minced vidalia onion (next time
i'll use red onion if i have it) 1/2 can rinsed white beans, 1/4 c
Italian Cheese blend - asiago, fontina, mozzarella, and provolone, the
preshredded junk (next time use tiny mozzarella balls), 1/4 c sliced
olives marinated in garlic-infused oil and a splash of red wine
vinegar, seasoned with rosemary, thyme, salt, pepper. It was good!
And for dessert, we have the other half or that easy chocolate cake
that was posted last week.
