Salmon with Soy-Honey and Wasabi Sauces
For Salmon:
1/2 cup Mirin (Japanese sweet rice wine)
2 Tbsp light soy sauce
1/4 cup rice vinegar
1 Tbsp finely grated peeled fresh ginger
4 pieces salmon fillet
For Sauces:
2 Tbsp soy sauce
1/4 cup honey
1 Tbsp fresh lime juice
2 tsp wasabi powder
1 Tbsp water
Marinate salmon: Stir together mirin, soy sauce, vinegar and ginger in
dish. Add the fish, skin sides up, and marinate covered, at room
temperature 20 minutes. Preheat the broiler. Make sauces: Boil soy
sauce, honey & lime juice in a saucepan, stirring frequently, until
thickened, about 4 minutes. Stir together the wasabi powder & water in a
small bowl. Broil the fish, skin side down on oiled rack of a broiler
pan 5 to 7" from heat until fish is just cooked through, about 6
minutes. Serve salmon drizzled with the sauce.
