Default Holiday Left Overs

I just used my leftover black-eyed peas and cornbread to make veggie
burgers. I mashed up the beans with an egg and about a quarter cup of
takeout salsa. I added enough crumbled cornbread to make the mix
stiff enough to shape into patties. I browned the patties in olive
oil. It was pretty good.
