Default Recommendation for large convection oven

As per my other post ( http://tinyurl.com/cv3ob ) I am looking to put a
light kitchen in my finished basement (replacing/supplementing the
wetbar). I got some good suggestions on easy ways to introduce some
burners, and now I'm wondering what to do about an oven.

Can anyone recommend a relatively large convection oven? Something
that is countertop, not a full "in the wall" oven. Also, something
that I can run on 120v/20amp circuits.

I'm thinking something 2 to 3 cubic feet, but I'm interested in seeing
what the biggest I can get is. Bigger than 3 cubit feet is probably
bigger than I need (and might need more power) but I'd still be
curious.

For reference, the kitchenette will have 2 dedicate outlets, each
120v/20amp (so 40 amps of total). There are also other outlets in the
vicinity if I need power for smaller appliances. The other outlets are
not dedicated and will be shared with the rest of the downstairs. The
entire house has 400 amps.
