How about something that's sort of an opposite of your main course,
like a potato gratin? Rather than the wine, chicken, mushrooms, onions,
and bacon in Coq au Vin, you'd have potatoes, cheese, bread crumbs
w/butter, etc. to compliment the main course... :-)
