Oven-Baked Chicken & Vegetables
(Vegetables are scrubbed, but NOT peeled)
4 carrots, cut in 2-inch pieces
2 large baking potatoes, cut in 1/2 inch slices
2 large sweet potatoes, cut in 1/2 inch slices
2 yellow onions, sliced thin
4 chicken breast halves, skinned
(any chicken parts may be substituted)
1 cup water
Salt & pepper to taste (if you have to have it)
In a casserole dish, place carrots and potatoes, arranging chicken
pieces on top. Cover with onion slices. Pour water over and cover.
Bake at 350 degrees for 1-1/2 hours or until chicken and veggies are
done. Makes 4 servings.
