Fresh Mango Salsa
1 1/2 cups chopped peeled mango
1 1/2 cups chopped tomato
2 tablespoons minced fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon finely chopped seeded jalapeno pepper
1 teaspoon minced peeled fresh ginger
Combine all the ingredients in a medium bowl; cover mango mixture, and
chill.
Yield: 3 cups (serving size: 1/2 cup mango salsa)
