I have a couple of Chinese cleavers but have never gotten used to them. I
have a third cleaver: a heavy butcher's cleaver that is great for things
like dismantling chickens, ribs and such. But for most things I liked my
medium-sized serrated knife and a chef's knife. I haven't used either one
since I got my santuko. Really super knife!
