I had something similar tonight for dinner. Didn't feel like cooking. Cut
thick slices of beefsteak tomato, head lettuce, sweet onion, and cucumber.
Dressed with a drizzle of EVOO infused with garlic, a chiffonade of fresh
basil, a bit of crumbled bleu cheese, and cracked black pepper. It was so
refreshing, I had seconds.
