CRACKER CAKE



MIX TOGETHER

11/2 Cups fine saltine cracker crumbs

2 Cups fine nuts

2 teaspoons baking powder

BEAT UNTIL PEAKS FORM

6 Egg whites

1 teaspoon vanilla

Gradually add 2 cups granulated sugar until stiff

peaks form but not dry

Carefully fold dry mixture into egg whites



Line 3-9 inch cake pans with aluminum foil

dull side down.

Grease foil, divide batter evenly into 3 pans

Bake at 325- 40 to 45 minutes

let cool slightly, lift foil away from layers

( layers will be hard )

BEAT 3 pints whipping cream, sweeten

to taste

put small amount on plate before icing

bottom layer.Finish icing cake. Refrigerate 48 hours.
