Cocoa Zucchini Cake

1 and 1/4 C sugar
1/3 C vegetable oil
1 tsp. vanilla
1 egg
2 egg whites
2/3 C milk
1 tsp. baking soda
1 C. all-purpose flour
1 and 1/2 C whole wheat flour
1/4 C cocoa powder
1/2 tsp cinnamon
1/2 tsp salt
2 C grated Zucchini
nonstick veggie spray (optional)
Combine first six ingredients in a large bowl. In another bowl, sift
dry ingredients. Add dry to wet, then fold in Zucchini. Bake at 350
for 1 hour in a lightly oiled Bundt pan. Or bake for 45 minutes in a
9X13 inch pan. Remove from oven when toothpick comes out clean. Let
stand in pan for 10 minutes before removing from pan.
