There isn't anything in your list above that require much mixing power.
If you had said you were making bagels and wanted to make 2500 gram
batches, I could see getting power. But your needs are much less
demanding. I would get the smallest unit available. Works best on your
counter, the 4.5 qt bowl size will mix/knead regular sized batches
better and (this is important) fit your dishwasher or dish rack better.
It is tempting to go big: consumer product marketers (been there)
learned the "supersize" response impulse long before the fast foodies
did. But the real issue is how is the power distributed. I think the
older, smaller KA units (which the classic is based on) are set up
better for slower speed use. They mix and knead well.
