Default Late Night Meals (4) Collection

Kale Quiche
Swiss Cheese and Mushroom Quiche
Bread, Fruit, Cheese and Coffee
Middle Eastern Light Dinner



I would try one of these ultra-simple menus. All can be prepared in
advance and served at room temperature, if needed:

Kale Quiche

kale, spinach or collard greens
onion
spices of your choice
pastry shell
shredded cheese
1 cup sour cream
3 eggs


Mmmm, kale quiche. (Also yum to spinach and collard quiche.)
Chop kale or other greens and saute with onion and spices. Into pastry
shell layer shredded cheese, then vegetable matter. Whip sour cream with
eggs and pour over vegetables. Bakeat 350 F 'til set. Devour.

Swiss Cheese and Mushroom Quiche

4-6 Servings

This recipe makes 1 9. pie. It can be an appetizer or main dish.
1 pie crust
1 1/2 cups grated Swiss. (Gruyere is best.)
1 medium onion chopped
butter
1/4 lb. Mushrooms
salt, pepper
dash of thyme
4 eggs
1 1/2 cups milk
3 Tbsp flour
1/4 tsp. salt
1/4 tsp. dry mustard
paprika

Sprinkle cheese over pie crust. Cover cheese with chopped; sauteed in
butter with
Mushrooms salt, pepper, dash of thyme. Beat eggs, milk, flour, salt and
dry mustard well together
Pour custard over mushroom layer. Sprinkle with paprika. Bake at 375 for
40-45 minutes, or until sold in the center when jiggled.

Variations
Substitute cheddar cheese for Swiss
Use fresh tomato slices instead of mushrooms. (Tomatoes don.t need to be
sauteed first)
Substitute 1 cup chopped scallions for the onion.
Add 1 tsp. prepared horseradish.



Bread, Fruit, Cheese and Coffee

Fresh fruit
Good coffee
Brie
Grapes
Good bread and butter
Coffee and/or tea and/or wine



Middle Eastern Light Dinner

Hummus
Baba Ganouj
Pita or other flatbread
Tomato-cucumber-onion salad
Yogurt (or tzatziki, if you're feeling ambitious)
Tabouli (again, if you're feeling ambitious or have access to good
store-bought)
