Thai-Style Cucumber Salad
2 tablesp. sugar
3/4 cup boiling water
1/2 cup white vinegar
3 cups peeled, thin sliced cucumbers
1/2 cup thin sliced carrots
1/4 cup thinly sliced green onion
2 tablesp. finely chopped red bell pepper
2 tablesp. chopped fresh cilantro
2 tablesp. chopped fresh mint
1 teasp. peeled, grated ginger root
1 teasp. minced jalapeno pepper
1/2 teasp. salt
1 clove garlic
Dissolve sugar in boiling water in a small bowl. Add vinegar: cover and chill 2
hours. combine cucumber and next 9 ingredients in a bowl. Pour chilled vinegar
mixture over cucumber mixture. toss gently. Yield: 5 serving (size:1 cup)
