I've done it both ways, big grill and small. Small is far easier to
transport, and that's what I'd do again. Using a charcoal grill on top of a
table isn't a method I'd recommend. Too much chance of burning the table,
and you don't own the table. ;-)

As for time, take a small coffee can and a pair of tongs. When you're done,
pull out the hot coals and dunk them in the water until they're out. (drop
them in if you want). You can re-loght these doused coals later if you want,
but they're add-ons, and not so good all by themselves.
