Default Prune Cake


My girlfriend found this recipe and had me make it yesterday night even
though I'm not a fan of prunes. It was quite good anyway. I think it
would be better with raspberries or blackcurrants.

Prune Cake

Prune stew:

200 gram prunes (with seeds)
1 cup water
3 tbsp sugar

Let prunes soak overnight in the water (or just add cooking time). Add
the sugar and boil the mixture over low heat until done. Remove the
seeds.

Custard:

2 eggs
2 tbsp sugar
1/4 vanilla pod
1 cup whole milk
2 tsp corn starch

Dissolve the starch in the milk. Cut the vanilla lengthwise and scrape
out the the seeds. Pour milk, eggs, sugar, vanilla pods and seeds into
a pot and bring to boil - keep it on 2 minutes and cool it.

Spongy Layers:

135 gram sugar
4 eggs
110 gram Flour
2 tsp baking powder

Whip eggs and sugar white and foamy. Mix Flour and baking powder and
fold it into the eggs. Strain into two tart dishes or springform pans.
Bake for 8 minutes at 420 F.

Whip 1 cup of heavy cream into whipped cream.

Assemble the cake with a spongy layer, a prune layer, a custard layer,
a spongy layer, and finally whipped cream on top.
