here is one i just made spur of the moment for valentines day that turned out
really well. After you gather all your "dipping food" it can be everything from
banannas to pretzels and have them cut into bite size peices you can start
making the sauce. in a mixing bowl put semi sweet chocolate that has been
broken into peices. this can be anything from imported belgian chocolate to
toll house(just make sure it is semi sweet cause we will be sweeting and
flavoring it) in a medium sauce pan place 8-16 oz of cream(you can use heavy or
light it all depends on your preference light whipping cream has a fat content
of 30-35 and heavy has a fat content of 36-40% so depending on diets and how
rich you want it you make the call) to the cream at a splash of amaretto, a
touch of vanilla extract and pinch of cinnamon. bring this to a light simmer
and once you have gotten this to your desired sweetness pour in small amounts
the heated liquid of the chocolate to melt it as you stir with a whisk(use a
thicker wired whisk) once you get it to the desired thickness stop adding the
liquid. this will chocolate sauce will keep for a good while in the fridge and
is good to have becuase after you have you fondue then next day you can take it
out the fridge and pour the sauce over your favorite ice cream. hope you enjoy
