Commercial dishwashers are more like dish sanitizers. They may only take
five minutes, but you have to have the dishes pretty well cleaned before you
put them in and they come out wet, so you need to have a place for them to
drip dry. As for the racks, I have seen them configured for dishes,
glassware, and for large items. There aren't as many features as you find
in a home dishwasher. Unless you have an enormous number of dishes to wash,
I would get TWO decent dishwasher instead of commercial unit. It will be
cheaper, quieter, and take up less space because you won't need a special
dish station to pre-clean the dishes and stack the racks for air drying.
