Back in the mid-1980s, when I was a sommelier in a top restaurant
here in Vienna, we frequently had American patrons that wanted
their wine "dry, but not too dry" (an oyxmoron, of course). I
regularly served them a 1981 Riesling Spätlese (Winzer Krems) with
solid 20 grams of RS. They invariably were totally delighted.
