Before going low carb...I regularly cooked rice, veggies and chicken
thighs at the same time in the same I think 6 or 8 cup black and decker
rice cooker. It was my fast meal for those days of stress. A can of
condensed cream of chicken soup and enough water to make 2 cups. 1 cup of
mixed veggies (of choice). 1 cup basmati rice. and 3 or 4 chicken thighs
quartered. A pinch of cumin and maybe a mince clove of garlic.
Chuck it all in, stir it around a bit, put the lid on and turn on the
cooker...around 17 minutes (without supervision) later supper. The
veggies will be 'well done' is the only draw back.
You could chuck in some frozen peas when the rice has finished cooking.
Stirring them in and avoid the 'well done'.
