Red Beans and Rice
TGC Daily Recipe
Makes 3 servings.
2 tsp. Olive oil
1/2 large onion, chopped
3 large garlic cloves, minced
6 oz. Turkey ham or smoked turkey
1/2 tsp. Dried thyme, crumbled
1/4 tsp. Cayenne pepper
1-2 tsp. Liquid Smoke seasoning, or to taste (optional)
1 cup canned red kidney beans, drained and rinsed
3-1/2 cups water
2 cups hot steamed rice, preferably brown
Heat oil in heavy large pot over medium heat. Add onion and garlic and
saute until tender, about 6 minutes. Stir in turkey ham, thyme, cayenne
and Liquid Smoke (if using) and saute for 2 minutes. Add beans and
water. Simmer, uncovered, over low heat until beans are creamy, about 1
1/2 hours.
Serve with steamed rice and a tossed green salad.
