This is my first try at carrot wine w/no additional herbs added. I took the
recipe from Terry Garey's book on homemade wine-making. I managed to get a
deal on a 1 lb bag of baby carrots @ $.69 each - bought 5 bags, shredded in
my food processor and gently simmered (don't boil according to Terry)for 45
minutes. Then strained the juice out, and froze the carrots for carrot
bread. These baby carrots were sweet - I used only 4 cups of sugar, plus 1
can of frozen Welch's 100% white grape juice. I just added my yeast last
night, it's a very orange color, much lighter than my pumpkin wine which is
only 2 weeks old. Good-luck and let me know how your batch goes.
