Different Green Bean Casserole

Serves 6 - 8 Active Time: 25 min Total Time: 1 hour

1 lb fresh green beans, trimmed, cut in bite-size pieces
1 pkg (10 oz) Baby Bella mushrooms, sliced (about 4 cups)
2 Tbsp olive oil, divided
2 cans/bottles (8 oz ea) Roasted Chicken or Turkey Gravy
1 1/2 cups French fried onions pieces

Preheat oven to 350 degrees. Bring large pot of salted water to boiling on
HIGH; add beans and blanch 2-3 min or until crisp-tender. Drain. Shock (to
stop cooking process) by transferring to a bowl of ice water; drain and
set aside. Heat 1 Tbsp of olive oil in large skillet on MEDIUM-HIGH,
until oil faintly smokes. Add half of mushrooms and cook, stirring, about
10 min, until dry. Remove from pan. Repeat with other half of mushrooms.
Season to taste with salt and pepper. Let cool. Mix beans and mushrooms
in 10x10-inch casserole dish. Stir in gravy; place on center rack of
oven. Bake 30 min. Top with fried onion pieces; return to oven 10 min.
Serve.
