White meat is from the areas of the bird that does no work. Those bred for a
lot of white meat are too big to really fly around and barely waddle around
the pen. Wild birds are much leaner and all the muscles are working. Thus,
the breast are much darker than the factory made turkeys.
On four legged animals the parts around the spice are the most tender, loins
and tenderloins. The breast area and fore legs are the toughest.
