Gingerbread MenWoman's Day

1/2 cup honey
1/2 cup sugar
1/2 cup unsalted butter
2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg -- preferably fresh
1/8 teaspoon ground cloves

3/4 cup white chocolate chips
red-hot cinnamon candies
narrow red, green or gold ribbon
In a small saucepan, bring honey, sugar and butter to a boil. Boil,
stirring, until sugar dissolves. Cool to room temperature (about 1 1/2
hours). In a large bowl, stir flour, baking soda, salt and spices until
blended. Stir in honey mixture and knead until smooth. divide dough in
half; wrap 1 half and leave at room temperature. Heat oven to 350 degrees.
Have ready 5 1/2" and 3 1/2" gingerbread men cookie cutters and lightly
grease cookie sheet. On a lightly floured surface with a lightly floured
rolling pin, roll out unwrapped half of dough to 1/8"" thick. Cut out
cookies using 5 1/2" cutter. Place 1" apart on greased cookie sheet.
reroll scraps. Gently press cinnamon-candy buttons in place. Repeat with
remaining dough, using 3 1/2" cookie cutter. Bake 6-8 minutes until edges
are lightly browned. Let cool on cookie sheet 1 minute before removing to
a wire rack to cool completely. Place white chocolate chips in a
quart-size Ziploc bag. Microwave on high 30 seconds. Press bag to see if
chocolate has melted; if not, repeat at 5 second intervals. Knead bag
until chocolate is smooth. Snip top off bottom corner and pipe eyes, mouth
and outline each cookie. Let dry, then tie a bow around neck of each.
Makes fourteen 5 1/2" and twenty 3 1/2" cookies.
