DH gets a wild turkey every year--the breast meat can be dry, and the
leg meat a little tough, but we've never had a bad tasting bird.

Many hunters will skin the bird so there's no need for plucking. You can
then rub it with butter and roast it, or brine it for a day and roast
it. Brining makes for a very juicy, flavorful bird.
